Symplinatural Recipes for Yam Fries and Grilled Spicy Fish

Ingredients

Medium size croaker fish
1 pack Sympli African yam fries
1 medium tomato
2 small fresh red peppers
½ of a medium sized onion bulb
2 garlic cloves, minced
2 tablespoons vegetable oil
¼ teaspoon curry powder
¼ teaspoon thyme
1 seasoning cube
½ teaspoon white pepper
1 table spoon sweet chilli sauce
1 table spoon ketchup
1 table spoon suya spice
¼ teaspoon ground nutmeg
Salt to taste

How to Prepare Yam Fries and Grilled Spicy Fish

Wash croaker fish thoroughly with tap water. Don’t forget to remove the scales and clean out the gut form the head of the fish. Pat dry with paper towel and set aside.

Heat up oven at 180 degrees Celsius.

Next, add tomato, fresh red pepper, onion and garlic in a food processor or blender. Blitz on medium speed till a not-so-smooth purée is formed. Place content in a mixing bowl and add all other ingredients. Mix thoroughly with a spoon to combine all ingredients together.

Place croaker fish on a chopping board, make three deep incisions on each side of the fish to allow for easy penetration of the marinade mixture.

Next generously coat fish with mixture. Remember to put some in the incisions made and in the open part of the head. Coat both sides of the fish. Save a little of the mixture for basting.

Place fish on an oven rack and place on the middle aisle of the pre-heated oven.

Leave to grill for 30-40 minutes. After 20 minutes, baste fish with the remaining mixture and a table spoon of olive oil and leave to finish grilling.

Heat up vegetable oil in a frying pan.

In a mixing bowl, add Sympli yam fries and salt to taste, mix thoroughly to combine.

Next gently drop yam fries piece after piece into the hot oil with a cooking tong but be careful not to over crowd the pan. Allow to cook for 8 minutes stirring evenly

Serve yam fries, and grilled spicy fish with sweet chili sauce or ketchup on a platter.
